Title:  CDP Pastry

Short Summary

Rate of Pay: $28.04

Assume complete responsibility for pastry station(s) including overall cleanliness. Prepare all food items related to pastry menu and various outlets in and around the CN Tower. Oversee cooking of food and pastry products, ensuring proper techniques and recipes are used and adhered to by junior team members.


Ensure equipment is in good working order; proper tools are used and ensure all mise en place is ready for daily services. Responsible for making sauces, pastries and dessert items, and ensure they are properly garnished and stored within a timely manner while maintaining quality control, health and safety, food safety standards

Job Description

  • Work as the lead cook in pastry station(s)
  • Bake, cook, measure, make, prepare fruits, vegetables and pastry products for daily services and functions as directed by pastry sous chef or chef de cuisine(s)
  • Follow pastry recipes and prepare menu items to meet the Company Menu standards
  • Work in functions setting, plating pastry catering items, setting up buffets as needed
  • Responsible for transportation of all food products, be sure it is packed and stacked in accordance with Kitchen Standard Operating Procedures (SOP’s)
  • Prepare and oversee cooking, baking and storing of food products; ensuring proper techniques (accurate recipes, portion sizing) and consistency are used and adhered to by junior team members
  • Overseeing the proper storage and rotation of food ingredients on pastry station(s)
  • Able to work as a team or independently
  • Work as a role model and mentor toward junior and new staff and delegate work as required
  • Adhere to all Company policies and departmental procedures and the Collective Agreement
  • Keep working area clean, sanitary and free of trip and slip hazards


  • A relevant college diploma or university degree in culinary arts, cook’s trade certification or equivalent is required
  • Completion of a secondary school diploma is required
  • Valid Food Handler’s Certificate preferred
  • Five (5) - seven (7) years of related cooking experience is required
  • Bilingualism (English/French) is an asset


Working Conditions

Department uniforms are provided to protect personal clothing from wear and damage.
Lifting or moving up to 25 kilograms as required
Interacts with employees and management
Flexible to work rotating shifts, which includes but is not limited to evenings, weekends, holidays and overtime as required.
